Quick Meals For Cooking On The Campsite. Made In Under 15 Minutes Submitted By Our Forum Members

KEN'S STUFFED POTATOES
Bake a few spuds in the microwave. (One spud only takes a few
minutes) Cut the spuds in half and scoop out the mash.
Empty a tin of pilchards into a separate bowl (Remove the bones)
mash up the pilchards and add some brown sauce. Add the mashed spuds
and mix together. Chop up a small onion and add to the mix. If it
looks a bit sloppy add some bran. Spoon the mixture back into the
spud shells - pile it up. (You can now let it go cold if you want it
later.)
When you are ready to eat - put a slice of cheese on the top and
bake or microwave for a few minutes. Serve with salad or beans.
(Actually - the pilchards, onion, bran and brown sauce mixture also makes
a good cheap sandwich filling) |

FANTIC'S FRIED POTATO AND BACON
(And Anything
Else Really)
When you make a 'normal' meal during the week before you go away for
the weekend, make twice the amount of Potatoes, mashed, diced,
whole, halved, whatever. Save the extra half in the fridge. (This
could also be leftovers, potatoes and vegetables without gravy,
which then becomes Bubble and Squeak)
On site, use the stored, pre-cooked potatoes and add to a frying pan
with hot butter and bacon/sausage/beans etc etc ... Takes as long to
cook as making bacon ...
Seriously scrummy, especially when the potato/butter gets browned

ANOTHER1'S MEATBALLS AND PASTA
Ingredients.. sausages, pasta,
pasta sauce, onion, garlic cloves {optional}
Step 1 Chop sausage into 3 pieces, chop onion, add crushed garlic,
place into frying pan. Step 2 Boil some water in separate pan. Add a pinch of salt. Step3 When sausage mix is brown, drain then add sauce, simmer for
10 mins. Step 4 Simmer pasta until cooked according to taste. Step 5 Drain pasta, then add sausage mix, stir well, serve
Enjoy.

ANOTHER1'S CHICKEN PITTA BREAD
Ingredients - Cooked chicken breast, salad, pitta breads, sauces
(Mayonnaise, Chilli, BBQ etc.)
1) Chop chicken breast into strips (can be warmed up if you prefer) 2) Prepare salad of your choice (lettuce, cucumber, tomotoes,
peppers, onions etc) 3) Warm pitta breads in a dry frying pan 4) Cut pitta breads along one edge and fill with a little chicken,
salad and sauce of your choice. |
ANOTHER1'S TUNA PASTA BAKE
Ingredients. pasta, tin tuna, cheese,pasta sauce
1. Boil pasta 2. Drain tuna 3. When pasta done, add tuna & sauce. 4. Put in heat proof dish, sprinkle with grated cheese 5. Put under grill till cheese melts...serve.

SUPREMEMUM'S PASTA OLIVES AND FETA CHEESE
One of favourite quick camping meals
Boil some pasta,
drain, stir in some Dolmio sauce, chuck in some olives and feta
cheese and eat straight from the pan with a nice fresh crusty French
stick and wash down with a bottle of red wine. |
SOOLIZ'S THINLY
CUT STEAK
Thinly cut steak, flash fried, stuffed in a warmed ciabatta
roll with some blue cheese.....mmmm mmmmmmm. Or bacon and brie. Both
even better with some sliced mushrooms fried in butter. And calories
give you energy for the long walk you'll need to go on after to
work everything off!! |

SUPREMEMUM'S CURRIES AND CHILLIES
Can be cooked at home, double
portions, one for now at home and the other frozen in an empty
ice-cream tub to take camping with you for the first couple of
nights. Much nicer than tinned ones, and you know what's gone in them
too. |
